For a long time my go-to for an easy lunch has been a Lean Cuisine or Healthy Choice meal, but I've since started making my own so both my husband and myself can have a home cooked meal without all the hassle. My three favorites are flank steak, pork tenderloin, and bbq chicken, with a variety of sides. I started doing this when I did a nutrition challenge that required me to eat many smaller meals rather than 3 large meals and I found that the convenience of tossing a small bag into my cooler bag for lunch was far easier than preparing a meal in the morning. If you're doing this for the first time, start simple, one meal, 4-5 bags. If you're looking for more like I do, I tend to cook in bulk, choose 2-3 meats with sides. My favorite combos: flank steak with red potatoes and green beans. Pork tenderloin with couscous and peas. BBQ chicken with sweet potato and corn. Last night I had Crock Pot Taco Soup, made a couple of weeks ago with a batch of frozen crock pot meals I prepped to keep dinners simple. My husband just calls it chili, but I believe it has a "soupier" consistency, and can be made more so by adding an additional cup of water when it is put in the crock pot. Aside from some initial prep work browning the ground beef before it is bagged, this recipe is simple. (For freezing crock pot meals - check out these tips and suggestions.) The corn, beans, tomato, do not even need to be drained! Everything from the can or jar goes directly into the bag to add to the delicious taco flavor. One great thing about this dish, especially for my husband and myself, is you can start with the base, then add spices or hot sauce as you prefer them. He puts sriracha on everything, but there is no need to cook it into the meal if you don't want it. I keep my recipes simple. This meal can easily be changed by using chopped onion instead of minced, tomato chunks instead of tomato sauce, and if you'd really like some extra texture, layer in some peppers. There is a lot you can do! We topped it with tortilla strips, but in the past we've also dipped tortilla chips and dipped crusty bread. There are a lot of possibilities. As a bonus, it reheats great! I divide what is left over into individual Tupperware and my husband takes it to work and I have lunch at home. Try it and let me know what you think! It requires many ingredients and does require preparation beforehand. If you're like me, it also makes a bit of a mess. However, while preparing it my husband was coming in and out of the kitchen and positively remarked on how amazing it smells. Plus, how could you possibly go wrong with a ground beef, sausage, a ton of cheese, and pasta? Just be prepared to spend about 20 minutes prepping the meats and combining the cheese before bagging and freezing the meal. Simple Chicken DinnerThis is a variation on another meal I have made before but hopefully a bit simpler. This very basic chicken dinner includes chicken, red potatoes, carrots, cream of chicken and cream of mushroom soups, and garlic. It doesn't get much easier! Be sure to layer the chicken in the freezer bag first, this way when you dump the contents into the crock pot, the chicken will land on top. This is by far my favorite beef stew, but it is not uncomplicated, you need time to prepare it without needy children interrupting. On my 1-10 scale I give it a 6. It should probably be a 7 or 8, but it is just so darn delicious it is worth every second of preparing. The flavor is rich and soothing, with a hint of onion, a strong garlic and beefy aroma, and a touch of wine to add a subtle exotic taste.
